March is National Celery Month!
One of my mom’s recipes fits this so well- Stuffed Celery! Enjoy!
First off Mom cleaned her celery so that it was tender and not stringy. She would use a knife to cut through the celery from the inside curved side and not quite cut all the way through to the outer curve and then she would catch the strings and pull the tough outer strings down and off of the celery. She did this to both ends and again in the middle as she cut the stalk in half. This does make a huge difference in taste.
